A Sandal Extravaganza!

When it comes to Summer 2010 sandals I’m all about pale pastels, metallics, beadwork and bold pops of color, color, color!

Personally, I gravitate towards wedge sandals because my favorite things to do in the summer involve walks in the park, window shopping in the city or strolling the boardwalk. For me these are definitely wedge activities : )

Modest Price: Fashion Bug (yes Fashion bug)

Moving from NYC to a small town taught me a few things. I had to cook at home more.

AND I had to find fashion inspiration wherever I can. I know that some style lovin’ girls have issues with Fashion Bug but I say don’t allow past prejudices to get in the way of your style.

One thing that I love about FB besides the prices is that they have a variety of sizes within one single store. I like the idea of going with a smaller girlfriend & being able to shop together.

Swim Cover ups = Awesome Spring/Summer Dresses

I fell in love the moment I saw it. A black and white print dress that hit right above the knee. I could see myself in it-it was just my style. My niece nodded with approval. I checked the price- it was under $25! Then I read the tag it read SWIMWEAR.

Well, one girl’s swim cover up is another chica’s gorgeous spring dress. Swim cover ups are perfect for the modest girl who is in desperate need of breathable fabrics as the weather warms.

This is the Avenue swim cover up I fell for last week. Believe me it is incredible on. While the light fabric makes it necessary to wear a tank underneath- it works well in a light layered look. In the dressing room I paired it with a lightweight blazer and jeans. Do you like??? : )

A Girl’s Got To Eat! Wednesdays

Nothing can be more relaxing or enjoyable than cooking up a great meal for yourself and/or family & friends. With the plethora of cooking shows & competitions as well as diets fads and crazes, the simple joy of cooking and eating has been displaced by too many don’ts and not enough yums : (

Many cooking novices fear the kitchen because they see it as a space of exact science rather than fun and experimentation. Just like modest style- a great meal usually boast a layering of simple items that create a fabulous whole.

On a given Wednesday- I will highlight something tested and tried in my kitchen-because a girl’s got to eat! For future reference all recipes can be found in the MP Fit page underneath Recipes & Snacks.

This month I give you roasted eggplant & whole wheat penne. This delicious dish was a breeze to make. +PLUS+ it had the hubby and me doing the happy dance with its robust flavor. I served it with a side of steamed vegetable medley.

ROASTED EGGPLANT & WHOLE WHEAT PENNE

1 box of whole wheat penne
2 tablespoons of olive oil
cooking spray
1 medium size eggplant (thinly sliced into rounds)
1 small onion finely chopped
Chopped clove of garlic
2 cans of diced tomatoes
Coarse black pepper, Sea Salt, Basil, oregano, red pepper flakes, grated Romano parmesan, chopped parsley for garnish.

1.Preheat oven to 375
2. Spray a cookies sheet with non-stick spray and arrange eggplant slices. Lightly salt and pepper the slices. Roast in oven until eggplant browns and has softened. Set aside.
3. Prepare penne pasta according to package instructions and set aside. *Remember to cook your pasta al dente.
4. Over medium heat-in a large pan- sauté the onions and garlic in heated olive oil until the onions start to brown. Season with black pepper and salt.
5.Add the eggplant and then the two cans of tomatoes.
6. Season your sauce to your liking with Basil, Oregano & red pepper. Bring to a light simmer.
7.Toss in the penne making sure to thoroughly integrate the sauce into the pasta. Allow to heat together for about two minutes.
8.Garnish with parmesan romano & parsley.
9. Serve with steamed veggies or a salad.
